Functional flours are our new finds here, check out the benefits and the recipe for this yummy cookie. Here in Brazil the functional flours are starting to be known, these grains are known as superfoods.
Amaranth is a gluten-free cereal, rich in protein, fiber and vitamins that can also help to reduce cholesterol and is rich in good quality protein, calcium and zinc that besides helping the body to increase the efficiency of muscle tissue recovery and its volume and also helps to preserve bone mass because of its high calcium content
Chia superfood improves intestinal transit, improves cholesterol, and even decreases appetite, because it is rich in fiber and vitamins. Has in its composition omega-3, antioxidants, calcium, protein, fiber, vitamins and minerals, which make this seed an excellent nutritional supplement, natural and economical.
Oatmeal is an important source of several vitamins, minerals, fiber and antioxidants essential for a healthy life, which makes it a superfood. Helps control blood sugar levels. It also helps reduce cholesterol levels, protects the heart, and stimulates the immune system.
RECIPE
1/2 cup of oat flour
1/2 cup of amaranth flour
2 tablespoons of chia
1/4 cup of butter or coconut oil (your preference)
2 tablespoons brow sugar or xylitol sugar (or one of your preference)
1 teaspoon vanilla essence
1 pinch of Xanthan gum
Optional 1 or 2 tablespoons of cinnamon powder
INSTRUCTIONS
Mix all the dry ingredients and the butter until it turns into a fluffy mixture.
Then, add water little by little, spoon by spoon, and add the essence.
The quantity varies according to the weather and the moisture content of the flours.
Then, with your hands, make a ball to finish the consistency so that you can open it with a rolling pin.
Time to roll out the dough, use plastic wrap to make it easier.
Thickness of approximately 4mm
With a coffee cup or dough cutter, make the cookies. Put them in a baking pan. If the pan is not nonstick, grease it.
Bake in the oven at approximately 180 degrees, the grill should be in the center of the oven.
Time varies depending on the oven, mine takes 15 minutes
Store
Store in a sealed glass jar after it has cooled.
It will last a week out of the refrigerator if it is cold, but at higher temperatures, it will last three days out of the refrigerator.
